The Sunburst offering is a singular expression of peaberry coffee cultivated by smallholder farmers whose families have worked Mt. Kilimanjaro's mineral-rich volcanic soils for generations. Mt.

Kilimanjaro's southern and eastern slopes rise dramatically across the Kilimanjaro and Arusha regions, where altitudes between 1,600 and 1,800 meters create the perfect conditions for this exceptional mutation. The contributing farmers—working plots of 1-2 hectares intercropped with bananas and avocados—meticulously hand-sort their daily harvest to isolate the rare peaberry beans that occur in only 5-10% of cherries. This painstaking selection process, performed cherry by cherry, represents generations of knowledge passed down through families who understand that these singular, rounded beans carry concentrated flavor that flat beans simply cannot match.
The Mt. Kilimanjaro Co-op operates with the intimacy of a true cooperative model, where farmers have direct input into quality protocols and pricing structures. Each farmer processes their own coffee using locally-made hand pulpers and fermentation buckets, maintaining control over every stage before delivering parchment to the cooperative for final milling.

This decentralized approach preserves the individual character of each lot while allowing for the collective strength needed to access international markets. The cooperative serves as more than infrastructure—it represents the economic independence of families who've chosen specialty quality over commodity pricing. The fully washed processing follows a meticulous protocol refined over decades. Hand-selected red cherries undergo depulping within hours of harvest, followed by 12-24 hour fermentation in clean water drawn from Kilimanjaro's mountain springs. Multiple washing cycles remove all mucilage before the beans are spread on raised drying beds, where constant hand-turning ensures even moisture reduction. The extended drying period, carefully monitored to achieve 10. 5-11% moisture content, preserves the bright acidity that defines Tanzanian coffee. Following a rest period, the cooperative's skilled sorters perform final hand-selection, removing any remaining defects before the rare peaberries are separated and bagged for export. This harvest reveals the sophisticated interplay between the peaberry mutation, volcanic terroir, and washed processing. The cup opens with explosive brightness—vivid strawberry and orange zest that announce themselves immediately, backed by winey acidity reminiscent of the finest Kenyan lots. As the coffee develops, dark chocolate depth emerges, building body and complexity without overwhelming the fruit-forward character. Black tea tannins provide structure, while subtle blueberry notes add dimension to the mid-palate. The finish lingers with wild honey sweetness, a testament to the concentrated sugars found only in peaberry beans and the pristine mountain water used throughout processing.
