Etherea represents our continued partnership with select smallholder cooperatives across Yirgacheffe's most coveted microclimates. Cultivated between 1,800 and 2,200 meters within Ethiopia's ancient coffee forests, this Grade 1 offering showcases the region's indigenous heirloom varietals in their purest expression.
Our Ethiopian partners employ traditional cultivation methods passed down through seven generations, hand-selecting only the most pristine cherries from trees that have thrived in volcanic soil for over a century. The natural processing occurs on elevated beds, allowing the highland air to develop the coffee's characteristic floral intensity while preserving its inherent complexity. This season's lot presents with exceptional clarity. The initial impression reveals bergamot and Meyer lemon, followed by jasmine blossom and stone fruit reminiscent of white peach. The cup progresses to reveal wild honey and Earl Grey tea nuances, concluding with a sustained finish that echoes orange blossom. The body maintains remarkable lightness while delivering substantial depth—a hallmark of Yirgacheffe's finest expressions.
Optimal extraction occurs through precision brewing methods. Pour-over techniques using Hario V60 or Chemex apparatus showcase the coffee's transparency and acidity. French press preparation emphasizes its honeyed characteristics, while AeroPress extraction balances both elements with remarkable consistency.
This offering represents approximately 200 kilograms from the 2024 harvest, selected from our most trusted producers in the Gedeb and Kochere districts.
Etherea exemplifies why Ethiopian coffee remains the benchmark for floral complexity.
